Chapter 00 · The Beginning
Our Story

A story rooted in land, legacy, and care.

Somewhere between the hills of Achaia and the still, salt-silvered plains of Messolonghi, something far more than a product was born. A mission was born — carried in the hands of a father, and, one day, the hands of his son.

IBeginnings

Two hands. One horizon.

We are not a large industry. We are a father, and a young son — and the trees that were here long before either of us.

Dappled light through wild olive leaves

Born in 1980, I grew up seeing olive trees not as trees, but as living treasures. Today, holding the hand of my four-year-old son, I carry on the same quiet tradition — not only for us, but for everyone still searching for something real.

The olive tree does not belong to us. We belong to it.

IIThe Miracle of the Wild Olive

Untamed. Unbroken. Alive.

In the wildest, most untouched corners of nature — where no human hand reaches — the wild olive tree is born.

It is not cultivated. It is not controlled. It endures.

Its roots travel deep into the earth. It weathers wind, drought, and time itself. From that resilience, it bears a fruit unlike any other — more concentrated, more intense, more alive.

This is the miracle of nature. Every drop of the wild olive carries a strength, a purity, and an authenticity that cannot be imitated.

IIIExtra Virgin, Uncompromised

Olive juice, in its purest form.

Alongside the wild olive, we tend — with care and patience — the cultivated trees from which our Extra Virgin Olive Oil is born.

Cold-extracted. Unprocessed. Uncompromising.

A fresh green aroma, a gentle bitterness, a natural peppery finish — the unmistakable signature of quality, and of abundant antioxidants.

Each harvest begins at the precise moment the fruit is ready — preserving every nutrient, every note, that makes Greek olive oil unlike any other in the world.

The House Code

Four marks of our craft.

01Origin

Achaia & Messolonghi

Rooted between two Greek landscapes — hill country and lagoon — where sea air and limestone shape every drop.

02Heritage

The Wild Olive

Fruit from trees untouched by cultivation — deeper in flavour, denser in character, born of resilience alone.

03Craft

Cold Extraction

Pressed without heat, within hours of harvest, so aroma, polyphenols, and life remain fully intact.

04Family

Father & Son

A small house of two pairs of hands — one experienced, one still learning — and a single, shared promise.

IVWhy We Do It

We do not sell oil. We share a treasure.

A treasure that grows on our own trees. Harvested with care. Crafted with respect.

Every time we fill a bottle of ELION, it feels as though we are offering a piece of our land, our family, and our story.

VFrom Us to You

A letter from the grove.

Branches of a single olive tree against the grove

My son is still very young. Perhaps he does not yet fully understand what we are building together.

But every time he runs among the olive trees, every time he smiles holding an olive in his hand, he reminds me why we began.

To offer something real. Something pure. Something worth sharing.

Because this treasure is not ours alone. It belongs to everyone who still believes in it.
